The Yellow pitahaya has a bright yellow thick scaly skin and although smaller than the red and pink variety, contains a higher mineral content than its cousins. The flesh of the yellow pitahaya is white and contains many small black edible seeds with flesh that is juicier and sweeter than the flesh of the other pitahaya varieties
