The Parsnip is a member of the carrot family, it has an earthy but sweet flavour and is great used in hearty winter roasts, soups and stews. Their texture is a little softer and more buttery than carrots. Be sure to add meaty flavors (like chicken or beef stock) when cooking to pick up the round sweet flavor from parsnips.
