Also commonly known as the Malabar spinach, when raw the leafy Ceylon Spinach has very fleshy, thick leaves that are juicy and crisp with tastes of citrus and pepper. When cooked though, it looks and tastes a lot more like regular spinach, but doesn't wilt as fast, & holds up better in soups and stir-fries!
