With its tightly packed flower heads, the Cauliflower has a firm, almost waxy texture, and a mild, delicate flavor. Although most cauliflowers are white, we are featuring the more unusual colored varieties here
Yellow (or properly known as Orange) Cauliflowers are also known as "cheddar" cauliflowers, though they taste nothing like cheese - it has a mild, slightly sweet & creamy flavor, boasting a much higher vitamin A content than its cousins!
Aside from the usual recipes, they are a great substitute for starches - try blending into mash potatoes or pulsing them and roasting to make cauliflower rice
