New Potatoes have thin, wispy skins & crisp, waxy textures. They are young potatoes and unlike their fully-grown counterparts, keep their shape once cut & cooked. They tend to be sweeter (because their sugar has not yet converted into starch) & are therefore particularly suited to salads!
