Gai Lan (芥蘭, also known as Chinese Broccoli / Kale) has thick stalks, large flat leaves & tiny buds (if the buds have flowered, its a sign it isn't as fresh). It has a slightly bitter (though not as bitter as broccoli) taste, and is usually stir-fried with garlic, or poached in water & served with oyster sauce on top
