With its tightly packed flower heads, the cauliflower has a firm, almost waxy texture, and a mild, delicate flavor. Although most cauliflowers are white, we are featuring the more unusual colored varieties here
Purple Cauliflowers have a mild & slightly sweet flavor, with nutty nuances. They're rich in the antioxidant anthocyanin (which is also found in red cabbage & red wine) contributing to its darker color!
Aside from the usual recipes, they are a great substitute for starches - try blending into mash potatoes or pulsing them and roasting to make cauliflower rice
