Brussel sprouts are super low GI and are packed full of vitamins and minerals. This quick and delicious gluten-free recipe takes inspiration from the bold flavors of the Mediterranean region, and combines it with the fresh sweet taste of these mini crunchy brassica!

Serves 2-3 persons as a side dish

Ingredients:

ADD TO CART
  • Brussel Sprouts - 300g washed and cut in half
  • Garlic - 2 Large Cloves thinly sliced
  • Anchovies canned in oilve oil - 4-5 fillets, roughly chopped
  • Olive Oil - 2 Tablespoons
  • Shelled Walnuts - Around 5 pieces, roughly chopped
  • Fresh Parsley - 1 small sprig, roughly chopped




Recipe:



For the Brussel Sprouts:

1) Blanch the brussel sprouts in boiling water for around 3 minutes

2) Rinse cooked brussel sprouts in cold water in a colander to stop them from overcooking and set aside



For Sauce and Finishing Dish:

1) Add the olive oil onto a pan on medium-high heat

2) Fry the the garlic and walnuts until golden brown, then add anchovies and mix for around 30 seconds

3) Add in the raisins and switch off the heat

4) In the same pan, add in the cooked brussel sprouts and mix well

5) Pour the contents of the pan into a serving bowl, and sprinkle parsley on top to finish

6) Optional: Drizzle some extra virgin olive oil on top for the finishing touch
